Chocolate Tempura is one of Desroches Island's signature deserts. A favorite amongst guests, this indulgent treat always gets a thumbs up! If you are missing this tasty treat, you can now try to make it at home. Sandeep Semwal shares his recipe with us. It makes 40 portions to adjust to make less.
You'll need the following ingredients:
- 540 grams of bitter chocolate Jivara
- 540 grams of melted chocolate
- 520 grams of white sugar
- 750 grams of flour
- 20 eggs.
Process:
- Melt the chocolate & butter together on a low heat and gently stir together. Remove from heat and add white sugar slowly.
- In a separate bowl, beat the eggs and then add the flour.
- Fold the chocolate, butter and sugar into the egg and flour mix, by hand.
- Leave the mixture to rest for 5 hours in the freezer.
- Scoop the mixture with a spoon and drop into frying oil. Fry until the mixture floats, then remove from heat.
- Plate, add your choice of ice cream, garnish with fruit or chocolate sauce and serve.
