Create an Island Style culinary experience at home!


Are you back at home and missing the delicious delicacies you tasted while dining at Desroches

We've put together some simple tips to give your kitchen an island style makeover so that you can incorporate some elements of the Desroches culinary experience, in your own home. 

We hope that you enjoy our top 8 tips!


Keep it fresh:
  • Fish (whatever type you are able to catch yourself or that you can buy locally. No frozen fish!)
  • Fruit (Bananas, Figs, Papaya)
  • Vegetables (Long beans, Aubergine)
Go green:
  • Grow your own Herbs (basil, mint, curry leaves) and most importantly:
  • Chili. 
Secret ingredients:
  • Creole spices
  • Coconut – get anything and everything (from the milk, to coconut chips to coconut sambal.)

Meal prep:

When it comes to food preparation, remember that its all about the taste first, and then plating and presentation. You could use banana leaves instead of plates or put leaves in glass jars on the table. Straw place mats, shells or stones, also add an island feel to the table. 

Create a lasting experience:

It's not just about making food to fill you up - it's about savoring the moment. Offering a fresh bread basket before meals prolongs the meal and adding a desert afterwards extends the experience, creating time for conversation.

Be creative:
  • In desserts, substitute traditional fruits with alternate varieties. 
  • Focus on having color variety on your plate. 
  • Think about the textures and shapes of the various food elements on the plate. 
  • How can you do things differently? 
Give a little extra:
  • Put a accompaniment: a dipping sauce, fresh chilies or herbed mayo, in a dish, on the side of the meal.
  • In addition to the fruit with desert, add a scoop of ice-cream or a sauce to the plate.
  • Sprinkle edible flowers to the main course for an unexpected element.
