Island style Bread recipie

Our stuffed Focaccia bread is a lunchtime favorite before meals. We are celebrated as having some of the most delicious food in the Seychelles, prepared especially for you by award winning chefs.

If you are back at home and already missing our fine dining culinary delights, try your hand at a bit of baking, with this easy to follow recipe:

Island stuffed Focaccia bread


  • 500 gm all purpose flour
  • 50 gm milk powder
  • 10 gm yeast
  • 10 gm salt
  • 30 gm bread improver
  • 50 gm sugar
  • 50 gm butter
  • 1 egg
  • 300 ml cold water


Mix all the ingredients together to form the bread dough. Once mixed, leave it to rest for an hour.
Once the dough is rested, line it on a bread tray with lots of good extra virgin olive oil.

The secret to our delicious Desroches  bread, lies in the heart of Italian cooking: it is important to use a very good quality extra virgin olive oil, single estate, cold pressed.

Once the tray is lined with dough and oil, let it prove for 4 hours and then knock the dough down again with your hands. Repeat the process two more times with every time give yourself enough time to prove the bread.

Leave the bread to cool in the fridge overnight. As with most good things… it is worth the wait!

In the morning, make the stuffing that goes inside the bread:

  • 50 gm onion
  • 50 gm tomoato
  • 100 gm boiled potatos
  • 10 gm ginger
  • 10 gm garlic
  • 1 pinch safron
  • 200 gm coconut grated
  • 10 gm coriander powder
  • 10 gm salt (or season to taste)

Fry the onion and ginger paste together until it gets golden brown.
Add the garlic and boiled potatoes and tomato together for 2 - 3 minutes.
Add the grated coconut, cinnamon and coriander powder. Ensure all the spices are mixed in and cooked well.

Leave the mixture to cool before you layer it inside the bread.
Bake the bread at 180 degrees C for 12  - 15 minutes.
Serve with lashings of olive oil and balsamic vinegar.
